How to Make Spicy and Sour Fish Fillet with Granulated Hot Chilli?

Spicy and sour fish fillet is a classic dish in Sichuan cuisine, famous for its rich flavor and combination of two main tastes - spiciness and sourness. Granulated hot chilli is an essential ingredient for making this dish. Here's a step-by-step guide on how to use granulated hot chilli to make delicious spicy and sour fish fillet.

Ingredients:

- 1 pound of fish filet
- 1/2 cup of corn starch
- Oil for deep-frying
- 2 tablespoons of granulated hot chilli
- 2 tablespoons of soy sauce
- 1 tablespoon of Sichuan peppercorn powder
- 2 tablespoons of sugar
- 1 tablespoon of salt
- 1 tablespoon of rice vinegar
- 2 cloves of garlic, minced
- 2 tablespoons of vegetable oil
- 1/4 cup of chopped scallion
- 1/4 cup of chopped cilantro
- 1/2 cup of water

Instructions:

1. Clean the fish fillet and cut it into small pieces.

2. In a bowl, mix 1/2 cup of corn starch and 1/2 cup of water to make a batter.

3. Heat up the oil in a wok or deep-fryer until it's hot enough (around 350F).

4. Dip the fish pieces in the batter and drop them into the hot oil. Fry until the fish turns golden brown (around 5 minutes).

5. Take out the fried fish pieces and drain the excess oil.

6. In a small bowl, mix 2 tablespoons of granulated hot chilli, 2 tablespoons of soy sauce, 1 tablespoon of Sichuan peppercorn powder, 2 tablespoons of sugar, 1 tablespoon of salt, 1 tablespoon of rice vinegar, and 1/2 cup of water.

7. In a wok, heat up 2 tablespoons of vegetable oil over medium heat. Add 2 cloves of minced garlic and fry until fragrant.

8. Add the mixed sauce to the wok and cook for 2-3 minutes until the sauce thickens.

9. Add the fried fish pieces to the wok and toss until the fish is evenly coated with the sauce.

10. Turn off the heat and add 1/4 cup of chopped scallion and 1/4 cup of chopped cilantro. Toss lightly.

11. Serve the spicy and sour fish fillet hot with steamed rice.
